Add Dr.Bee Appam podi, grated coconut and water in a wide bowl. Mix the ingredients into a smooth batter. Add more water if necessary. Mix 1 tbsp of sugar and 1 tsp of dry yeast with the batter. If you are adding active yeast, follow the package instructions carefully. Combine the mixture well.
Rest the batter covered for about 8 hours for fermentation. After opening the lid, stir the batter slowly. It should be of flowing consistency. Add the required amount of salt and stir well. Heat an Appa Chatti and pour a full ladle of batter into it. Maneuver the chatti in circular motion to spread the batter to its sides.
Cook the appam covered until the sides turn slightly crispy and brownish. When the thicker middle portion of the appam is done, remove it from the chatti. Savour delicious vellappams with veg stew or meat curry.
